About Me

My name is Nicole Thomas, affectionately known as, Choqlat.  Around here, we do and say the things that are good for our body, soul, and mental health.  So, feel free to relax, call me by my nickname if you choose, and enjoy the journey


I'm a Health & Nutrition Coach with a passion for helping people realize their power through a variety of pathways including non-toxic living, flexible dieting, and overall wellness. I provide continuous support, education and accountability to my clients so they achieve optimal results.


My ultimate goal is to help you learn and embrace the power of you, all while making you and your personal wellness the priority.


I have 1 dog, a cat (I found weighing 0.5lbs and rescued), and a small herd of cattle on my ranch in Northeast Texas.  I've competed in several sports in my lifetime, including, Track & Field. Muay Thai, and CrossFit (CrossFit Games 2010, 2011, & 2012).  After reaching 30 years old, I struggled maintaining a healthy weight, despite working out regularly.  I attempted counting macros for over 10 years and could never commit to the food restrictions often advocated by macro counting nutrition coaches. 


Now in my 40's, I decided to take the bull by the horns, formally educate myself, and implement the same great principles of counting macros, but my way - with a true flexible approach.  I am in the best shape of my life and it would be my pleasure to serve others who may be struggling to achieve the results they desire.

My Strategy

Your body doesn't know you're eating a pizza, it's your mind that knows.  Your body knows to process the protein, fats and carbs you've consumed.  If you want to lose or maintain your weight, you have to stay within your calorie budget - it's that simple. 


I advocate for an 80/20 approach; 80% whole nutritious foods and 20% of whatever else your heart desires.

MY JOURNEY

1990's - Track & Field


I've loved to run since my teenage years where I ran for my high schools track & field team.  I competed in the 100m dash, 4x4 Relay, and Shot put for several years, having gotten kicked off the team for fighting my senior year.  These were the toughest years of my life but they set me up for the evolution that followed.

2000's - Muay Thai Fighter


I've been a fighter all my life, but it wasn't until I found my Muay Thai teacher, Saekson Janjira and his school that I learned a lot about myself and more about respect. Through blood, a lot of sweat, and so many tears my teacher and my team have made me a better human being and a bad ass fighter.

2010's - CrossFit Coach & Competitor


I was introduced to CrossFit in 2009.  Through my journey, I became a certified CrossFit Coach.  I've competed in countless CrossFit competitions, including, The CrossFit Games in 2010 and CrossFit Regionals in 2011.  We've owned a small CrossFit gym which we closed when we relocated.   It was in CrossFit where I began to build my strength in ways I never thought my body could achieve. 


However, in 2013-14, I found myself fatigued, anemic and experiencing low libido, among other symptoms, I was diagnosed with uterine fibroids and subsequently had 17 surgically removed.  The procedure requires going through the abdomen, which meant a lengthy recovery.  As you may have guessed, this is where my weight struggles began.  I spent the next several years mostly focused on eliminating toxins from my home and personal care products in an effort to improve my hormone and immune health.  I have been incredibly successful with the battle of finding true clean products and have significantly improved my health and the health of others by way of my aromatherapy.

Today - Weightlifting


While I did a ton of weightlifting in CrossFit, it was when I started to focus solely on olympic lifting and power lifting that I saw dramatic improvements in my overall power and strength.  It was through all of these sports, over many years of training, that I've built some sweet muscle mass. 


Having experienced all that I have in my life, it became time to focus on my physical wellbeing.  I dove right in and started macro counting, my way - eating the same foods I love, but staying within my calorie budget.  I am in the best shape of my life because, this time, I chose to make it easy for me.  It is my prayer that I can make dieting, maintaining, or lean mass building, easy for you too.  And, if you've ever struggled like me with immune and hormone health, I can help you with that too.  LOVE!
